Raw Dark Chocolate
¼ cup Cacao butter (grate into bowl, place bowl into larger bowl ¼ full with hot water, stir to gently melt) ½ cup Raw Cacao Powder 2 tbsp Organic Maple Syrup (start slowly, taste mixture, add to desired taste & consistency) 1 Vanilla bean (cut open scrape along length with knife place sticky vanilla in mixture) ¼ tsp chilli flakes or chilli pips from raw chilli (hot kick if using pips)
Raw Caramel Chocolate ¼ cup Cacao butter (grate into bowl, place bowl into larger bowl ¼ full with hot water, stir to gently melt) 1 Vanilla bean (cut open scrape along length with knife place sticky vanilla in mixture) ½ cup Lacuma 1-2 tbsp Apple juice concentrate syrup or Organic Maple Syrup NOTE: will be thicker, stronger, setting mixture, not as runny as the cacao will be
Stir until cacao powder turns into a thick, glossy, chocolate syrup consistency. Now work on your Raw Caramel Chocolate mixture. Place Raw Caramel mix in chocolate mould first to cover ½ shape of mould, fill rest with Dark Raw Chocolate mix (flexible mould tray preferable or flexible small muffin moulds work well, stainless steel moulds don’t work well with gourmet raw food setting) Place in freezer for 1-2hrs, will last in freezer for 2 weeks I mix in raw protein powder for added health kick, this is optional. Great for athletes, levelling blood sugar, cellular health, muscle tone.
